Scottish Tablet

Tablet, or 'taiblet' (if you're using the Scots or just sounding a wee bit posh) is a sugary-buttery confection with a characteristic fine granularity and melt-in mouth experience. It is one of the three well known sweets made from boiling sugar and milk/butter - the other two being toffee and fudge

The journey from simple ingredients to mouthwatering goodness is deceptively simple.. but if you boil too long, or get the proportions wrong, then you may end up with a hard burnt dark bitter mass, or a sticky, soft, chewy mess.

While original tablet recipes were often focussed around boiling milk or cream with the sugar, most tablet recipes these days use 'condensed' milk to try to speed the manufacturing process. This creates potential issues as condensed milk is commonly sweetened and is used for varied purposes. For commercial purposes many manufacturers adjust the recipe 

Our tablet recipe is a result of experimentation 15 years ago for fundraisers and is based around evaporated, not condensed, milk. We believe we achieve a soft-butteriness - but in the end the proof of the tablet is in the tasting...
